Hara Bhara Murgh ( Chicken with Cilantro and Mint gravy)

Ingredients:
1 lb boneless skinless chicken breast
1 bunch cilantro
1 bunch mint ( around 1/3rd of the cilantro )
1 big onion julienne ( long strips )
1 big green bell pepper julienne ( long strips )
2 big cloves garlic ( finely chopped )
2 green chillies
3-4 tbsp tandoor masala ( mdh )
2-3 tbps yoghurt
salt
sugar

Directions:

1) Cut the chicken into 1 inch pieces add yoghurt , tandoor masala and salt to taste. Marinate for 2-3 hours.
2) Mix mint, cilantro , chillies in a mixer along with 2 strips of onions with salt and sugar to taste. Add 3 tbsp water and grind till its a fine paste.
3) Heat oil in a pan, add garlic , onions and till golden brown
4) Add Bell peppers , marinated chicken and cook.
5) Cook till chicken is almost done and add the cilantro, mint mixture and cook for another 15 minutes on medium heat. This will give a nice green color and aroma to the chicken.

Can also be used as a mixture for kathi kabab or serve along with roti.

Rib Eye Steak

Ingredients:
1 rib eye steak ( around 1 pound )
canola oil
kosher salt
freshly ground pepper

Utensils:
cast iron skillet

Directions:
1) Preheat Oven to 500 F
2) Heat the skillet on high
3) Oil the steak, add coat with kosher salt and freshly ground pepper.
4) Sear the steak on both sides for 20 - 30 seconds each ( really high heat )
5) Put the skillet into the oven for 3 mins on each side for medium rare.

Rawa Ladoo

Ingredients:
2 Tbsp ghee
1 bowl rawa (sooji)
1 bowl sugar
1 bowl water
4-5 cardamoms
few raisins, cashews
4-5 strands of saffron

Directions:
1] Heat ghee in a pan
2] Add rawa to it and fry on medium heat till rawa starts becoming brown
3] Make cardamom powder and add to the rawa
4] Add raisins, cashews and saffron to the rawa and fry for 2-3 minutes.
5] Turn off the heat
6] In a pan mix water and sugar and bring to boil
7] Test a drop of boiling sugar syrup on a plate. If the drop spreads, continue boiling.
8] Turn off the heat after sugar syrup is ready and mix the rawa with the syrup
9] Let the mixture stand for about 4-5 hours
10] Then use some ghee to roll the mixture into balls (laddoos)

Chawli chi bhaji (Black eyed beans Curry)

Ingredients ( Serves 2 ) :

1 cup black eyed beans
2 cups water
1 clove of garlic
1/2 big onion ( finely chopped )
4 tbsp tomato puree
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/4 tsp asafeotida powder
1/4 tsp turmeric
1/2 tbsp jaggery
1/2 chili ( finely chopped , no seeds )

Directions:

Pressure cook the black eyed beans in 2 cups of water, keep aside. Heat oil in a pan on medium heat. Add mustard seeds , cumin seeds and fry till crackling noise stops. Add asafeotida powder, onion, turmeric powder and fry till onions are golden brown. Add garlic and chili and fry for a minute. Add tomato puree, salt and jaggery and cook for 2 minutes. Add the black eyed beans and water, cook till desired consistency is reached. Serve hot with chapati or rice.
